Every journey begins with a first step — mine is starting with a clementine. I’m looking forward to this new day and a new year and a new life of healthy eating as I officially begin Dr. Joel Fuhrman’s “Eat to Live” Six-Week Plan.
Last night I had a few friends over for New Year’s Eve and I was proud of myself for making a nutritarian spread. I made two big pots of soup: Red Lentil Chili (loved this recipe!) and Lotsa Veggie Chowder (probably would not make this again). For an appetizer I served veggie roll-ups made with a whole-grane Flatout Flatbread stuffed with roasted red pepper hummus, avocado, tomato and spring greens. There were a few non-nutritarian snacks but those either got eaten or thrown out after the party. So now my fridge is filled only with foods that will help me do this six-week challenge.
My sister Jane is doing the six-week plan with me. Actually it was her idea — yay Jane! I got an email from her yesterday that she and her husband had cleared out their fridge and filled it with fruits and veggies in preparation for our new journey. So we are all starting out with the tools we need get this done.
