A few new things today: oatmeal for breakfast and Moroccan Stew Wrap for supper. This seems like two grain servings but I’m counting each one as a half serving.
For the oatmeal I used 1/4 cup old fashioned oats, 1/2 chopped apple, about 3/4 cup water, cinnamon, and three chopped dates which I microwaved for 2.5 minutes, and then added a little cashew milk. After I made it I thought, “Why didn’t you add flax?” So tomorrow I will try that. I’m also going to try adding the whole apple.
The wrap is my idea of how to eat supper on my way to dance class. I used this product which is low-cal and has flax:
The filling is some leftover stew which includes chick peas, onion, cauliflower and carrots in a spiced tomato sauce. I also decided to incorporate my daily tablespoon of flax meal (double flax!) into it. My lil’ wrap came out super cute:
So here is what’s in my lunch/supper bag. I’m meeting friends for lunch at a place with a salad bar so no salad:
The red things on the right are red bell pepper strips, top right is walnuts and almonds, top is a container of blackberries, wrap on the left, cantaloupe and strawberries in the center.
