It’s taco salad day! Obviously this salad is very different than my taco salads of the past, but I’m excited about it nonetheless. For the dressing I mixed together 1/2 cup of Chi Chi’s salsa (the lowest salt brand at my store), a teaspoon of taco seasoning, and the juice of one lime. It tastes so good! Then I added kidney beans, corn, red onion and tomatoes to my normal lettuce mix. Some cilantro and green onion would have added to the taco theme but I didn’t have any. Next time!
The taco seasoning is some that I made before I started doing all this using Alton Brown’s Taco Potion #19 recipe. It does not contain any sugar but it does contain salt. I’m going to get the ingredients this weekend to make a salt-free batch.
I will be eating supper at home tonight so that is not pictured.
I had a nutritarian approved lunch today! Toasted chickpeas in a skillet with smoked paprika and tossed that with cold cucumber. Mmm

That sounds really delicious! I just finished the taco salad and it was so good. While eating it occurred to me that avocado would be another taco-themed ingredient that I could add next time.
