Chunky Garden Tomato Sauce 

This is another quick but oh so tasty recipe that uses some help from the store.


1 large onion chopped
8 oz package sliced mushrooms
1 large or two small bell peppers chopped
1 cup (or more) chopped zucchini
1 jar low sodium pasta sauce


  1. Saute the onion, mushroom, and bell peppers in a dry frying pan until they start to soften.
  2. Add the zucchini and cook a few more minutes, then add the jar of pasta sauce.
  3. Let it all simmer together for about ten minutes.

You can serve it as is as a stew, or serve over cooked spaghetti squash (pictured), zucchini noodles, or whole wheat pasta.
