It’s a “lunch and dinner at my desk” day because after work I’m going straight to a play downtown with friends.
That sad little item in the lower right corner is my one and only baby carrot. Good thing it’s Friday and I can go to the store tomorrow. The lower left corner is my “Emergency Bean Salad” made of frozen mixed vegetables, a can of black beans, salsa, fresh lime juice and some taco seasoning. It wouldn’t win any culinary awards but it is healthy and filling and, frankly, tastier than the tiny, $8 corn and bean salad I bought at the Minneapolis airport earlier this week. Don’t get me wrong, I was thrilled they had anything for sale with no meat or cheese, but it was absolutely coated in oil and not that flavorful.
My salad today is simple — romaine lettuce, tomato, dill and of course a tablespoon of flax meal. Pistachios, melon, and some fruit round out the day. Not pictured: a bowl of veggie chilli I had for breakfast.
