The six-week plan is over, but I’m still keepin’ it nutritarian. For breakfast I had Summer Vegetable Soup (I often eat soup for breakfast). My lunch salad is a bit boring with just romaine lettuce, red pepper and chick peas, but I will brighten it up with some red cabbage I have in the fridge at work, and one of the many salad dressings I keep on hand.
The container of just chick peas bears some explanation. At work I keep packages of steam-in-the-bag veggies in the feezer. If I have to work late I microwave one of those, add the chick peas, some salad dressing (many kinds also taste good on cooked veggies) or sometimes just some Mrs.Dash, and I’m set for dinner. Not elegant, but better than a snack from the vending machine, or whatever fast food is available in the Loop after 5pm. I only needed half a can of chick peas for my salad so I decided to just bring the other half can with as insurance against a possible late night ahead.
The strawberries were on sale for 99 cents. The half-full container in the picture represents 3/4 of one box. Why oh why didn’t I get two boxes?
