There is only one thing you need to know about the Minneapolis airport: Gate G1!
I travel a lot for work so finding nutritious food at airports is a big deal for me. The Minneapolis airport has numerous food options, but most of them don’t really work for a nutritarian. But at gate G1 they have a big, beautiful, by-the-pound salad and hot food bar.
Look at this:
I found this place once before a few years ago, but the last several times I’ve been at this airport I could not find it. I wandered around; I even asked at the information desk but they had no idea what I was talking about. Then on my last trip I happened to be flying out of gate G1 and there it was! Sadly I had already purchased a pre-made salad that I had to pick the meat and cheese off of. But I knew where I would be eating on my next trip.
Here is the lovely salad I made (yes, I’m on the plane and it’s sitting on my tray table):
I also got a cup of lentil soup which I ate before getting on the plane. They had the ingredients listed which is awesome — then you know exactly what you are getting.
I’m thrilled to have re-located the long-lost Minneapolis airport salad bar. Time to eat my salad!
That salad bar looks totally amazing. I am almost tempted to drive to the airport just for their salad! And your salad looks excellent!

There was some turbulence on the flight so the salad eating was a little challenging but I made it. Ideally I would have time to eat before boarding, but our meeting ran long.
