Just a quick post– I hope to add a “Friday Facts” post later. Earlier this week I made a butternut squash soup using a recipe from the Forks Over Knives cookbook. There was not quite enough left for a meal so I supplemented it with a package of steam-in-the-bag frozen cauliflower. I’ve also packed up the last of the grapes, the last pear, the last tomatoes and cucumber, and (not pictured) the last apple. Good thing it’s Friday and I can go to the store tomorrow!
I’m set for the day with healthy snacks and a healthy lunch. Now off to work!
