PB and J Kale Salad

Salad that tastes like a peanut butter and jelly sandwich? Yes, it’s true. Or at least I think it does — let me know in the comments if you do too. This recipe is my own creation. I’ve not seen anything quite like it out there on the interwebs.

Please note that this makes one entre-sized serving of salad.

Dressing Ingredients:

1 tablespoon creamy peanut butter
1 tablespoon water
juice of 1/2 lime
handful of red (or concord) grapes
salt and black pepper to taste

Salad Ingredients:

5 oz kale (one-third of a one-pound bag)
1/4 cup peanuts, chopped
1 cup (or more) red (or concord) grapes, sliced in half
1 carrot, grated

Instructions:

  1. Put all of the salad ingredients in a large bowl.
  2. In a separate container use an immersion blender to combine all of the dressing ingredients.
  3. Pour the dressing over the salad ingredients and toss. Because this is kale you can do this ahead of time and store until you are ready to eat.

This is a very filling salad and to me when you are eating the grapes and the peanuts together  it tastes like a peanut butter and jelly sandwich. A variation on this is to use orange segments instead of grapes in the salad, and use the orange juice to make a light vinaigrette instead of the peanut butter dressing. To me that is the secret of making a kale salad delicious — using plenty of fruit to sweeten the salad up.

Also I should note that grating the carrot instead of just chopping it really helps because the tiny carrot flecks will stick to the kale leaves and add their sweetness to the kale.
