This is a favorite breakfast of mine when I have the time to make it. I love it because the flavor is both sweet and savory, the colors are dynamite, and I love that I’m getting a serving of greens right away in the morning. Sometimes I spice it up with some chili powder, sometimes I bring out the umami flavors with some soy sauce. It is a simple but very filling meal for one, or a light meal for two.
Ingredients:
Cooking spray (see note below)
1/2 red onion, chopped in largish pieces (so they can make their presence known)
1 sweet potato cut in quarters and sliced
5 ounces kale (a third of a one pound bag)
Salt and pepper to taste
1 teaspoon chili powder OR 1 teaspoon soy sauce (optional)
Instructions:
- Spray pan with cooking spray. Note: you can omit the oil if you incorporate fat in your meal in some other way, such as eating a few nuts. Sauté sweet potatoes and onions until potatoes start to brown.
- Add a few tablespoons of water and cover pan, allowing potatoes to steam. Keep pan covered, stirring occasionally, until potatoes are cooked through.
- Add kale. Do not be alarmed by the large mound in your frying pan! Sauté until kale is wilted. Add seasonings to taste.
Below is the final product. I chopped the onions too small in this version and I felt they got lost. Hence the directive to use “largish pieces”.
