Yes, this is my second pesto recipe. But I think I finally found my go-to. It is nutritarian, the ingredients are things I have on hand, and it is yummy!
2 cups basil leaves, roughly chopped
1 heaping tablespoon minced garlic
1/4 cup walnuts, chopped
1 cup white beans
3 tablespoons lemon juice
1 tablespoon water (or more if needed)
1/2 teaspoon salt
black pepper to taste
- Put all ingredients in a food processor and process until smooth.
This time I roughly chopped the basil leaves and walnuts ahead of time and that seemed to make my food processor deal with everything a little bit more easily, but you may not need to do this. Also, I did not actually add any water because there was a lot of water clinging to the basil leaves after I washed them, but that may not be the case for you. The leaves were REALLY wet so you may need to add a couple tablespoons of water.

It was creamy and delicious. It tasted how I remember pesto tasting. I was really pleased with it! I used some to top a big plate of zucchini noodles with pan-roasted tomatoes. It was yum!
