Sweet and Sour Kale Salad

This salad was inspired by the ingredients you usually find in Sweet and Sour Pork at a Chinese restaurant — and it turned out so good I wanted to share it. The “recipe” is mostly just a list of ingredients, but sometimes we need salad inspiration, so here is some:

1 cup (or more) fresh pineapple diced
1 red bell pepper diced
1/4 red onion diced
1/4 cup cashews or nut of choice
5 oz (1/3 of a one pound bag) of kale
Generous splash red wine vinegar
Kraft Zesty Lime Dressing (or home-made lime vinaigrette)


1. Toss all ingredients together. When cutting the pineapple try to get any juice on the cutting board into the salad.
2. Enjoy!


The red wine vinegar gives it that “sour” taste and the pineapple and red pepper add the sweet.  The cashews add some of the richness normally provided by the deep-fried pork cubes.

Ideally, yes, you are not using bottled dressing. Someday I hope to make all my own dressings from scratch, but for right now sometimes I need that shortcut, and the Kraft Zesty Lime dressing fit the bill.

I tried making this salad with canned pineapple — but it really was not the same. So when they have fresh pineapples on sale, buy  a red pepper too and make this salad!

  1. This is a fantastic salad! I was looking for another way to eat kale, and had fresh pineapple, so I biked to the store for a red pepper and made this today for breakfast/lunch. For the dressing I used the juice of 1/2 lime, 1 tsp red wine vinegar, a squirt of honey and a squirt of olive oil. Then I massaged this into the kale before adding the other salad stuff. Thank you for posting this!
