So, I wanted to make some roasted veggies for a snack, but everything in my fridge was already destined for something else, so I headed for my freezer which I always keep stuffed with bags of frozen vegetables. I took a bag of frozen cauliflower and a bag that was a mix of green beans, wax beans and baby carrots and emptied them into my colander. I ran hot water over them until they seemed un-frozen and then gave the colander a good shake to remove excess water. I spread them out on a baking sheet lined with parchment paper, sprayed them with some olive oil and seasoned with Mrs. Dash (and a little salt truth be told) and then roasted at 425 degrees for about 30 minutes.
I put them on the bottom rack of the oven to help them brown, and I stirred them about half way through. This was the result:
Roasty, toasty and delicious. And no chopping! Maybe this is something everyone has done but if not I highly recommend giving it a try when you want something quick for a snack or side dish, or as a mix-in for some cooked grains or who-knows-what.
Also, if you look for sales bags of frozen veggies can be a real budget-saver. I probably got these guys for a $1 each — can’t go wrong with that!
This is such a good, easy idea. We are definitely going to do this!
